In December the Little Red Door Cancer Agency holiday party fell on the same day as my Door to Wellness cooking class so instead of ONE class we had TWO! We took advantage of the readily available seasonal ingredients and made fresh cranberry sauce and a DTW Indiana State Fair favorite: Harvest Skillet Supper!

Fresh Cranberry Sauce

Have you ever made fresh cranberry sauce?

The fresh cranberry sauce we made in the second class was served on the side with a hearty grain and orange cranberry sweet bread. Fresh cranberry sauce is a sweet-tart recipe that can be made to suit your taste and diet. I like to add a bit of white or brown sugar to mine because lets face it- cranberries are bitter without a bit of something sweet. Maple syrup, orange juice, apple cider, Stevia, brown sugar or even honey make a great sweetener. A client in class mentioned monk fruit. I have never used monk fruit in a recipe but now I am intrigued!

Fresh Cranberry Sauce

The fun part about making fresh cranberry sauce is listening to them pop a bit as they warm up. COok this recipe on medium heat and stay close by- it only takes between 10 and 15 minutes to complete.
